- 3 tbsp. fresh green peas (approximately 0.5 kg.)
- 110 gr. pancetta, diced (1 tbsp.)
- 1 shallot, chopped
- 1 tsp chopped garlic
- Grated zest and juice of 1 orange
- 1/4 Art. chopped parsley
- 1 tbsp. l (15 gr.) Butter

Recipe preparation:
- In a large skillet over medium-low heat, fry the pancetta, until it becomes crispy, about 5 minutes. Add shallots and garlic, fry for 1 minute, and then add the orange juice.
- Increase heat to medium, add peas and fry until ready for about 3 minutes. Remove the pan from the heat and stir in peas of orange zest, parsley and butter. Try on taste, salt if necessary. Although hardly you have to add a lot, as the pancetta gives its the salinity of the dish.
