Spinach salad with blue dressing cheese

  • 2 anchovy fillets
  • 2 tbsp. l extra virgin olive oil
  • 2 garlic cloves, grated
  • 2 large slices of sourdough bread, cut off the crusts, crumb tear into pieces the size of 1 bite
  • 1/3 Art. yogurt or kefir
  • 1/4 Art. sour cream
  • 2 tbsp. l crumbled blue cheese (approximately 30 gr.)
  • 2 tsp cider vinegar
  • 1 tbsp. l chopped fresh parsley
  • Half cucumber, thinly sliced

Recipe preparation:

  1. Preheat the oven to 175 ° C. Soak the red onions in a small a bowl of ice water for about 30 minutes. Drain and dry bow.
  2. In the meantime, prepare croutons. Mash Anchovies with a fork. Combine in a medium-sized bowl of olive oil, mashed potatoes from anchovies, 1 grated clove of garlic and a pinch of salt and pepper. Give stand for 5 minutes.
