- Hold the washed spinach over boiling water in a double boiler or in colander for five minutes.
- Throw spinach over melted butter in a pan on two minutes.
- Finely chop the greens.
- Cut the liver into pieces, season with salt and pepper.
- Fry pieces of the liver over high heat for a minute on both sides, pour vinegar, pour greens, mix.
- Serve hot, putting spinach on the dish, on top of the liver with greens.
