- Fry the spinach with olive oil for 10 minutes, lightly stirring.
- In a separate bowl, combine spinach with ricotta, add onion, fried until golden.
- Separate the yolk, mix with warm water and flour, knead dough.
- Divide the dough into two equal parts, one of which is wrapped in cling film. Roll the other part into a long, wide strip. Then divide it into two strips, cutting along.
- On one of the strips lay out the filling with small slides on the same distance from each other. Top cover with a second strip and take the dough between the slides of the filling, then gently cut the dough in these places with a relief knife to get the same ravioli.
- Put ravioli in boiling salted water, cook no more than 5 minutes. Serve hot with a little olive oils.
