  1. Fry the spinach with olive oil for 10 minutes, lightly stirring.
  2. In a separate bowl, combine spinach with ricotta, add onion, fried until golden.
  3. Separate the yolk, mix with warm water and flour, knead dough.
  4. Divide the dough into two equal parts, one of which is wrapped in cling film. Roll the other part into a long, wide strip. Then divide it into two strips, cutting along.
  5. On one of the strips lay out the filling with small slides on the same distance from each other. Top cover with a second strip and take the dough between the slides of the filling, then gently cut the dough in these places with a relief knife to get the same ravioli.
  6. Put ravioli in boiling salted water, cook no more than 5 minutes. Serve hot with a little olive oils.
