Ingredients for the recipe:
- 1 can (800 gr.) Pickled tomatoes, knead
- 2 cans (450 g each) canned red motley beans pinto, drain and rinse the liquid
- 2 tbsp. l olive oil
- 1 large onion, chopped
- 2 large sweet peppers, chopped
- 3 medium-sized carrots, finely chopped
- 6 cloves of garlic, chop
- 1 tbsp. l ground cumin
- 2 tsp ground coriander
- 2 tsp dried oregano
- Coarse salt
- 3 tbsp. l chili powder or to taste
- 1 or a half chilli chipotle in adobo sauce, crumble
- 1 tbsp. l tomato paste
- 2 tortillas, split into pieces
- 1/2 tbsp. brewed coffee
- 2 tbsp. l unsweetened cocoa powder
- 1/2 head of cauliflower
- 1/2 tbsp. finely chopped cilantro or parsley, and some leaves for sprinkles (optional)
- Grated cheddar cheese sliced in rings green onions, Greek yogurt or sour cream, to serve (by wish)

Recipe preparation:
- In a large pot with a thick bottom, heat the olive oil. Add onions, sweet peppers, carrots and 1/2 tsp. salt, fry on moderately high heat, stirring until half cooked, approximately 8 minutes Add garlic and cook for another 2 minutes. Add hot powder. chili, cumin, coriander, oregano, chipotle peppers, tomato paste and tortillas, cook, stirring until the tomato paste gets red-brown color, approximately 4 minutes. If the mixture begins stick, add some water. Then pour in coffee and simmer, about 30 sec Stir in tomatoes, cocoa powder, beans, 2.5 tbsp. water and bring to a boil. Reduce heat and simmer on low stirring occasionally until thick, about 1 hour 30 min
- Coarsely grate cauliflower. In about 10 min before cooking spicy vegetarian chili, add cauliflower. Stir in chopped cilantro and salt over to taste.Spare hot vegetarian chilli in portions, sprinkle cheese, green onions and serve with yogurt.
