Ingredients for the recipe:
- 1 (5-6 kg.) Thawed and gutted turkey
- Zest and juice of 5 oranges, cut into wide stripes
- 1 tbsp. coarse salt
- 1 tbsp. Sahara
- 12 teabags
- 4 bay leaves
- 6 clove umbrellas
- 12 peas of black pepper
- 1 tbsp. bourbon
- 240 gr. butter, room temperature
- 2 tbsp. l honey
- 3 tbsp. l Dijon mustard
- 3 tbsp. l mustard

Recipe preparation:
- Fill a large container with 2 liters of water, add 1 cup salt, zest and juice of oranges, sugar, tea bags, bay leaves, cloves, peppercorns and bourbon. Bring to a boil and cook on low heat for 10 minutes, until the salt and sugar are completely dissolved. Add 4 liters of cold water, cool. Load turkey completely into the brine, if the turkey is not submerged, add water. Refrigerate for 8-10 hours.
- Remove the turkey from the brine, rinse and wipe dry. Stir in a bowl of butter, honey, Dijon and Indian mustard. Rub the turkey inside with plenty of the mixture and outside as well as under the skin. Leave the turkey at room temperature for 30 minutes.
- Preheat the oven to 180 C. Put the turkey on a baking sheet breast up, tie the legs and tuck the ends of the wings.
