Spicy sweet barbecue pork ribs sauce

BBQ pork ribs are obtained rosy, crunchy, juicy and boast appetizing crust. Spicy sweet glaze gives them a piquant taste. sauce, which also adds a twist to this dish.

Photo BBQ pork ribs in spicy-sweet sauce Time:Difficulty: easy Servings: 4 – 6 capacity: 1 cup (tbsp.) – 240 ml. 3/4 cup (st.) – 180 ml 1/2 cup (tbsp.) – 120 ml. 1/3 cup (st.) – 80 ml. 1/4 cups (st.) – 60 ml. 1 tablespoon (tbsp.) – 15 ml. 1 teahouse spoon (tsp) – 5 ml.

Ingredients for the recipe:

Dry marinade for rubbing

  • 2 tapes of pork ribs (2.7 -3.1 kg.)
  • 1/4 Art. paprika
  • 1/4 Art. brown sugar
  • 2 tbsp. l coarse salt
  • 1 tbsp. l cayenne pepper
  • 1 tbsp. l garlic salt
  • 1 tbsp. l ground black pepper
  • 2 tbsp. l rapeseed oil
  • Additionally: 4 tbsp. wood chips of cherry or walnut, soaked in water for at least 1 h

Spicy sweet barbecue sauce

  • 1/2 tbsp. vegetable oil
  • 1 very finely chopped sweet onion
  • 2.5 tbsp. ketchup
  • 2 tbsp. cider vinegar
  • 1/2 tbsp. worcester sauce
  • 1/4 Art. Dijon mustard
  • 2 tbsp. l ground black pepper or to taste
  • 2 tbsp. l brown sugar
  • 1 tsp cayenne pepper, or to taste
  • Juice of two lemons

Recipe preparation:

  1. If necessary, remove the thin membrane from the back each rib tape; throw it away. Mix brown paprika sugar, salt, cayenne pepper, garlic salt and black pepper in a small bowl. Oil the meat and then rub it liberally a mixture of spices. Leave for 45 minutes at room temperature.
  2. Meanwhile, heat the grill for cooking with indirect heating to 120⁰С, with wood shavings for aroma, if use. (I use bourbon barrels. Cherry and walnut fit too, but don’t use mesquite.) Wrap wetted shavings with a double layer of thick aluminum foil. Place foil shavings on the coals.
  3. Lay the ribs with the meat up. Close the lid and cook, turning over periodically, for 2 hours 30 minutes, until the meat is will be smoked, and will not slightly separate from the bone.
  4. Brush the ribs with a spicy-sweet barbecue sauce and continue cook for another 30 minutes, until caramelized sauce and meat is ready. Serve with spicy-sweet barbecue sauce.

    Spicy sweet barbecue sauce

    In a saucepan, heat the oil over medium heat; add onion and cook it for 5-7 minutes, until soft. Add ketchup, vinegar, sauce Worcester, mustard, black pepper, brown sugar, cayenne pepper and lemon juice. Bring to a boil, reduce heat to a minimum and simmer for 10-30 minutes, until the aroma is soft and restrained. Try and, if necessary, add salt and pepper. Keep the barbecue sauce in the refrigerator in a tightly closed container for several months.
