Ingredients for the recipe:

Spice mix

  • 3 tbsp. l paprika
  • 2 tsp ground cumin
  • 2 tsp mustard powder
  • 2 tsp ground fennel seeds
  • 2 tsp coarse salt
  • 1 tsp coarse pepper
  • Preparation: Combine all the ingredients in a bowl.

Cherry Vinegar Steak Sauce

  • 2 grilled, peeled and chopped skin and seeds red peppers (or 6 chopped picillo peppers)
  • 1/2 tbsp. aged cherry vinegar
  • 3 tbsp. l Dijon mustard
  • 2 tbsp. l horseradish (strain)
  • 2 tbsp. l honey
  • 1 tbsp. l molasses
  • 2 tsp Worcester sauce
  • 1 tsp coarse salt
  • 1/2 tsp ground pepper
  • Preparation: Whip all the ingredients in the kitchen combine or blender until smooth. If the mixture is too much thick and does not spread, add a few tablespoons water.

Recipe:

Grease 4 ribeye steaks (from a thick edge) or a short steak sirloin (340 gr. each) with olive oil, salt, pepper and grate Spanish spice mix (recipe for rubbing spices included) with one side. Grill seasoned side down on high heat, 3-4 min., then turn over and fry another 5-6 мин. (to a state of low frying). Serve with Steak Sauce with cherry vinegar (sauce recipe included).
