Ingredients for the recipe:

Chicken Kebabs

  • 450 gr slightly smashed and cut into strips of 2.5 cm. chicken skinless and boneless breasts
  • 1/2 tbsp. low salt chicken stock
  • 1/2 tbsp. light coconut milk
  • 2 tbsp. l low salt soy sauce
  • 1 thinly sliced shallot head
  • 1 minced clove of garlic
  • 1.5 tsp Thai fish sauce (or another 2 tsp. soy sauce low salt)
  • 1 tbsp. l brown sugar
  • 1/2 tsp lime zest
  • 1 tbsp. l chopped fresh ginger
  • 3/4 Art. spicy peanut dip sauce (see recipe below)
  • 2 tbsp. l crushed leaves of fresh basil or cilantro
  • 1/4 Art. chopped roasted peanuts
  • Equipment: 8 bamboo skewers 20 cm long. (soak for 20 minutes)

Spicy Peanut Dip Sauce

  • 1/2 tbsp. natural creamy peanut butter
  • 1/4 Art. low salt chicken stock
  • 3 tbsp. l low salt soy sauce
  • 1.5 tbsp. l brown sugar
  • 1.5 tbsp. l chopped fresh ginger
  • 2 tbsp. l lime juice
  • 1 tsp chopped garlic
  • 1/2 tsp chili pepper flakes
  • 1 tsp red curry paste
  • 1 peeled and coarsely chopped shallot head

Recipe preparation:

  1. In a medium-sized bowl, mix the chicken stock, coconut milk, soy sauce, shallots, garlic, fish sauce, brown sugar, lime zest and ginger. Put strips of chicken and pickle hour. Remove the chicken from the marinade, discard the marinade.
  2. Sprinkle a non-stick grill pan culinary spray and heat over moderate heat. Until the pan is heated, string chicken on skewers. Sauté for 2-3 мин. on each side until the meat is ready and light stripes.
  3. Serve the chicken on skewers with peanut dip sauce, sprinkle basil or cilantro and chopped peanuts. Spicy peanut dip sauce: Put all the ingredients in a blender and beat until homogeneous state. The sauce can be prepared in advance, for 1 day and keep in the refrigerator for 3-4 days.
