  1. The first step is to disassemble the fish. Gut, cut head and remove fins. From the head you need to remove the gills when cooking they give off an unpleasant taste of bitterness. With a sharp knife, grind the fish and to separate it from the ridge. Get all the bones from the fillet and cut it into portioned slices.

  2. Take a sufficiently large pan, pour 3 liters of water into it, add fish head, ridge and put on fire. When the water boil, you need to reduce the heat to a minimum, salt, pepper and add spices.

  3. While cooking fish broth, you need to peel the vegetables and add them into the pan, you don’t need to cut them, just throw them whole. Cook everything for 40-50 minutes, and then add the fillet. Cook fish yet 20 minutes, after which pull out all the products and strain the broth.

  4. Add the required amount of gelatin to the filtered liquid and mix well until it dissolves.

  5. Arrange the pieces of fish in portions and decorate greens. Optionally, you can also add meat from the head of the fish. Pour the broth and put the molds in the refrigerator. The dish will be ready to use when the broth is completely turned into jelly.
