- Heat the oil in a large pan. Add onion with salt and fry for 3 minutes.
- Then add chopped hot pepper, ginger, garlic, fry 2 minutes and season with spices.
- We cut tomatoes and toss in a pan, pour vegetable broth and add tomato paste. Bring to a boil and then cook for 10 minutes, stirring occasionally.
- Add coconut milk and chickpeas. Cooking a few more minutes.
- Serve with rice and fresh cilantro. Bon appetit!
