  • 6 eggs

  • 3 chopped green onion heads
  • 1 tbsp. coarsely grated cheddar cheese

Recipe preparation:

  1. Preheat the oven to 180 ° C. In a large saucepan over medium heat. bring the water to a boil. Put potato slices and boil until softness. Strain. At this time, in a medium-sized frying pan with non-stick coating heat the olive oil and lay the onion. Season with salt and black pepper to taste. Sauté the onion until tender and the beginning of caramelization, about 5 minutes. Put chopped slices of chorizo and garlic and sauté until sausage starts brown. Remove the pan from the heat. In a large bowl, whisk eggs until they become light yellow. Add milk green onions, cherry tomatoes and cheddar. Mix well. Season with salt and black pepper. Add the chorizo mixture to the bowl and potatoes and mix gently. Put the whole mixture in to the pan.
  2. Put it in the oven and bake until the eggs are set, about 15 minutes Remove from the oven and let the tortilla stand in pan for 10 minutes, then turn it over. To make it easier use a large clean plate: turn the tortilla over it and shift to a large chopping board. Tortilla cut triangles and place on serving plates. Serve warm or at room temperature.
