Ingredients for the recipe:

  • 350 gr spaghetti
  • 350 gr chilled sweet italian turkey sausages minced meat, remove the shell
  • Coarse salt
  • 3 tbsp. l olive oil, and also for spraying
  • 6 cloves of garlic, cut into slices
  • 1 head of cauliflower, divided into small inflorescences
  • 1 bunch of green onions, cut into rings
  • 1 tbsp. grated pecorino romano or parmesan cheese

Recipe preparation:

  1. Boil spaghetti in a pot of salt water, as indicated in the instructions on the package. Leave 2 tbsp. liquids for preparation, drain the rest of the liquid.
  2. Meanwhile, heat the olive oil in a large pan, add sausages and fry at a moderate high temperature, until golden crust, stirring and kneading the minced meat with a wooden spatula, about 4 to 5 minutes Move sausages to the side and add in the same pan garlic, fry until golden brown, 2 – 3 min
  3. Add cauliflower and fry a little, about 2 min Pour 1 tbsp. liquids, reduce the temperature to medium and simmer with the lid on until the cabbage is soft, about 8 min Remove the lid and evaporate the liquid for 2 minutes. Turn off stove.
  4. Add spaghetti and green onions to the pan, sprinkle olive oil and salt. Pour 1 tbsp. liquids or depending of the desired thickness of the dish, mix the spaghetti thoroughly for 1 – 2 min., Sprinkle with cheese and shake. Sprinkle when serving plenty of olive oil, if desired.
