Ingredients for the recipe:

  • 6 thick slices of bacon, cut into strips 12 thick mm
  • 1 large onion, chopped into small crumbs
  • 3 cloves of garlic, chopped into small crumbs
  • A pinch of red pepper flakes
  • 3 tbsp. l tomato paste
  • 340 gr mixed mushrooms, cut into slices
  • 340 gr dried spaghetti pasta
  • 2 tbsp. l (30 gr.) Unsalted butter
  • 2 tbsp. l chopped fresh parsley
  • 2 tbsp. l chopped fresh tarragon
  • Grated Parmesan cheese, for sprinkling (optional)

Recipe preparation:

  1. In a large saucepan, bring salt water to a boil, add spaghetti and cook until al dente, about 6 minutes. Discard pasta in a colander, leave the liquid for the sauce.
  2. Fry the bacon in a large skillet with medium to high temperature for 5 minutes, until golden brown. Add onion, garlic, pepper flakes and 1 tsp. salts; cook occasionally stirring until onion is soft, about 5 minutes. Add tomato paste and cook, stirring, until mixture will turn red-brown in about 3 minutes. Add mushrooms and continue cooking for another 3 minutes until the mushrooms begin soften. Add 1 tbsp. mix liquids, and boil.
  3. Add spaghettini to the pan, 1/4 tbsp. liquids from cooking, butter and greens. Cook by shaking pan, until the paste absorbs part of the sauce, 1 – 2 min. At need to dilute the dish with the remaining liquid. Decompose spaghetti with sauce on a plate and sprinkled with parmesan.
