Spaghetti Pumpkin Carbonara Pasta

This dish proves that Spaghetti pumpkin can with dignity replace pasta even in an Italian dish like Carbonara paste, and yet it will remain just as tasty. Ready-made pumpkin Spaghetti is very easily divided into long pasta fiber. To do this, it is usually baked, but even faster will boil in the microwave. 15 minutes – and your vegetable spaghetti ready. Ingredients for the recipe:

  • 2 large spaghetti pumpkins (a little over 1 kg. Each)
  • 3/4 Art. grated parmesan + additionally for serving, according to wish
  • 1 large yolk
  • 120 gr. pancetta, diced at 0.5 cm.
  • 1 small clove of garlic, minced
  • 1/4 tsp red pepper flakes
  • 1/3 Art. fat cream
  • 1/4 Art. parsley leaves chopped
  • Green salad for serving

Recipe preparation:

  1. Use a serrated knife to cut the pumpkin in half. Scoop out the seeds and discard. Put the pumpkin on a plate for microwave, cover tightly with plastic wrap and warm to maximum until it is soft and easy to split with a fork into fibers, 13-14 minutes. Scrape with a fork pumpkin spaghetti in a bowl.
  2. Meanwhile, in a medium-sized bowl, mix the parmesan, egg yolk, 0.5 tsp salt and a large amount of black pepper.
  3. In a large frying pan over medium heat, fry, stirring, pancetta until crisp, about 6 minutes. Add garlic and flakes of red pepper and fry, stirring, until aroma, about 1 minute. Stir in heavy cream while scraping from the bottom stick pieces into sticks and bring to a boil. Turn down the fire to moderate, add the pumpkin and mix so that it is completely topped with sauce.
  4. Add the parmesan mix and mix gently to the yolk is boiled and a cream sauce is obtained. Stir in the parsley. Arrange in 4 plates and serve, sprinkled as desired parmesan, with green salad in a separate plate.
