- 2 large spaghetti pumpkins (a little over 1 kg. Each)
- 3/4 Art. grated parmesan + additionally for serving, according to wish
- 1 large yolk
- 120 gr. pancetta, diced at 0.5 cm.
- 1 small clove of garlic, minced
- 1/4 tsp red pepper flakes
- 1/3 Art. fat cream
- 1/4 Art. parsley leaves chopped
- Green salad for serving

Recipe preparation:
- Use a serrated knife to cut the pumpkin in half. Scoop out the seeds and discard. Put the pumpkin on a plate for microwave, cover tightly with plastic wrap and warm to maximum until it is soft and easy to split with a fork into fibers, 13-14 minutes. Scrape with a fork pumpkin spaghetti in a bowl.
- Meanwhile, in a medium-sized bowl, mix the parmesan, egg yolk, 0.5 tsp salt and a large amount of black pepper.
- In a large frying pan over medium heat, fry, stirring, pancetta until crisp, about 6 minutes. Add garlic and flakes of red pepper and fry, stirring, until aroma, about 1 minute. Stir in heavy cream while scraping from the bottom stick pieces into sticks and bring to a boil. Turn down the fire to moderate, add the pumpkin and mix so that it is completely topped with sauce.
- Add the parmesan mix and mix gently to the yolk is boiled and a cream sauce is obtained. Stir in the parsley. Arrange in 4 plates and serve, sprinkled as desired parmesan, with green salad in a separate plate.
