Smoked spicy pork ribs in horseradish glaze and maple syrup

  • 4 plates of pork ribs (each 1.4 kg.)

  • 3 tbsp. l ground chili pepper Ancho
  • 3 tbsp. l seasoning chili
  • 2 tbsp. l ground coriander
  • 1 tbsp. l ground cumin
  • 2 tbsp. l salt
  • 2 tsp ground black pepper
  • Additionally: 3 tbsp. wood chips (hickory, mesquite or Apple tree)

Glaze

  • 2 tbsp. maple syrup
  • 0.5 tbsp. horseradish, squeeze
  • 2 tbsp. l with a hill of Dijon mustard
  • 1 tbsp. l ground chili pepper Ancho

Recipe preparation:
