Small Turkey Meatballs

Ingredients for the recipe:

  • 450 gr minced meat from dark turkey meat
  • 1/4 Art. grated parmesan
  • 1/4 Art. grated pecorino romano cheese
  • 1 small grated onion head
  • 3 minced cloves of garlic
  • 1 egg of category CO
  • 1/4 Art. dried bread crumbs
  • 3 tbsp. l ketchup
  • 1/4 Art. chopped fresh parsley leaves
  • 1 tsp salt
  • 1/4 tsp ground black pepper
  • 3 tbsp. l olive oil
  • 740 gr. simple tomato sauce, see recipe below or ready marinara sauce

Simple tomato sauce:

  • 2 cans (900 gr.) Mashed tomatoes
  • 1/2 tbsp. extra virgin olive oil
  • 1 small chopped onion head
  • 2 cloves of garlic
  • 1 chopped celery stalk
  • 1 chopped carrot
  • Sea salt and freshly ground black pepper
  • 4-6 basil leaves
  • 2 dried bay leaves
  • 4 tbsp. l (60 gr.) Unsalted butter (optional)

Recipe preparation:

  1. In a large bowl, put onions, garlic, eggs, bread crumbs, ketchup, parsley, parmesan and pecorino cheese, salt, and pepper mix. Stuff the turkey mince. Form from this mixture 3 cm meatballs. Put them on a large plate or a baking sheet.
  2. Preheat in a large heavy skillet over medium-high heat. butter. Put the meatballs and saute until they are browned. from all sides, about 5 minutes Turn off the fire. Shift meatballs on a plate. Pour off excess oil. Add about 3 Art. marinara sauce. Put the meatballs in the pan again. Put on a moderately low heat and simmer until the sauce is slightly thickens, and aromas do not mix, 15-20 min. Salt and pepper the sauce to taste. Transfer the meatballs in the sauce into a serving bowl. Serve on skewers.
