- Cut the lamb into cubes of 2 cm.

- Add thyme leaves, lemon juice, lemon zest to the meat, chopped garlic and vegetable oil. Add salt and pepper to your taste. Mix and leave to marinate for 1 hour.

- Wash raisins and soak in warm water for 30 minutes.

- Cut the eggplant into cubes, salt and fill with cold water and leave for 20 minutes.

- We drain the water, drain the eggplant.

- We cut the cabbage in squares, peel the onion and cut into quarters.

- In a deep pan, fry potatoes for 5 minutes, chopped cubes.

- Add onion and meat. Cook another 5 minutes, stirring.

- Add cabbage and eggplant, cook for 5 minutes.

- Pour the wine, add the raisins. Reduce the heat and cook under cover for 15 minutes.

- Add parsley, salt and pepper.
