  1. In salted water, cook for half a minute for 15 minutes, then filter and let cool.
  2. Steam the shrimp for about 5 minutes. Then we clean them. We wash the arugula with fennel and then chop with a knife.
  3. We cut a small part of the mango, and cut the flesh of the larger and pull it out to get a bowl of mango, pulp cut into cubes.
  4. Combine all our ingredients, pour oil and orange juice, season with salt and pepper and mix everything.
