- 30 fresh shiitake mushroom caps
- 2/3 Art. sake
- 4 tbsp. l soy sauce
- 2 tbsp. l Mirina
- 2 tbsp. l Sahara

Recipe preparation:
- Wash the mushroom caps and cut off the legs. In a pan, mix Sake, soy sauce, mirin and sugar, bring to a boil. Reduce fire so that the liquid boils slightly, and lay the mushrooms.
- Stew for 7 minutes. Remove the mushrooms and use immediately for the salad (see Fish, Ginger and Shiitake Salad Recipe), or serve to meat.
