Scrambled eggs with salsa in a pan

  • 1 pepper blanched, peeled and diced
  • 1 bunch green onion, chopped
  • 1 red jalapeno, cut in half, peeled and thinly chopped
  • 0.5 tbsp. fresh corn kernels
  • 8 large eggs
  • 4 tbsp. tortilla chips, slightly crushed
  • 1 tbsp. grated cheddar (about 100 gr.)
  • 1/4 Art. fresh cilantro torn + extra for serving
  • Diced avocado, sour cream and pico de gallo, for filing

Recipe preparation:

  1. Melt butter over moderate heat in cast iron pan with a diameter of 25 cm. Add the blanched, green onions and jalapenos; fry, stirring until vegetables are slightly softened, 1-2 minutes. Add the corn and 3/4 tsp. salts; fry occasionally stirring until vegetables are soft, about 2 minutes.
  2. In a large bowl, beat eggs with 1/4 tbsp. water and 0.5 tsp salt. Add eggs to the pan and fry, stirring constantly with silicone spatula until they harden, about 2 minutes. Add to pan tortilla chips, 3/4 tbsp. cheese and cilantro; stir fry to evenly distribute the ingredients, another 1-2 minutes.Note If you are cooking in a pan over charcoal or bonfire, then fry a little longer.
  3. Sprinkle the omelette with the remaining 1/4 tbsp. cheese and put on top avocado, sour cream, fresh pico de gallo salsa and sprinkle cilantro.
