Ingredients for the recipe:
- 600 gr scallops
- 1/4 Art. chopped cilantro leaves, plus 2 tbsp. l
- 8 slices of bacon
- 1 tbsp. l olive oil
- 1 ripe papaya, peeled, seedless and chopped cubes
- 1 tbsp. l lime juice
- 1 tbsp. l chopped jalapenos
- 1/2 tsp ground cumin
- 1 tbsp. cooked quinoa

Recipe preparation:
- Preheat the oven to 200 degrees. Sprinkle a large baking sheet culinary spray.
- Cook 1 tbsp. quinoa according to instructions on packaging. When cooking, add 1/4 tbsp. chopped cilantro. Cover and set aside.
- Cut the bacon halves across and wrap in slices about 450 gr scallops. If necessary, fasten with wooden Toothpicks. Heat oil in a large heat-resistant frying pan on medium heat. Add all the scallops and sauté for 1-2 minutes. with each side to golden color. Place the pan in the oven and bake for 5 minutes, until the scallops are cooked (become opaque).
- While scallops are cooking, make papaya sauce. AT in a small bowl, mix the papaya cubes, 2 tbsp. l cilantro, lime juice, jalapenos and cumin. Add salt and black pepper.
- Put 2 cooked scallops from the pan and place in fridge for another recipe. Serve the remaining scallops with quinoa and papaya sauce. A recipe for Grebeshkov wrapped in ham.
