Sausage with sweet potato in foil parcels on grill

This dish is as easy to prepare and hearty as potatoes with sausage, but much tastier, because the pieces are smoked sausages are mixed chopped sweet potato, celery, dried apricots and thyme in one package and baked on the grill. All juices and the aromas of the ingredients merge together, and it’s excellent picnic dish. Bake each serving in a separate roll, and when they are ready, just sprinkle with spicy orange sauce. Ingredients for the recipe:

  • 2 small sweet potato tubers, peeled and cut into pieces, 1 each cm.
  • 1 large sweet onion, sliced in pieces of 2.5 cm.
  • 4 stalks of celery, cut into pieces of 4 cm. + Leaves for filing
  • 2/3 Art. dried apricots
  • 6 sprigs of thyme
  • 3 tbsp. l olive oil
  • 1 and 1/4 Art. freshly squeezed orange juice (from about 2 oranges)
  • 1/4 Art. sherry vinegar

Recipe preparation:

  1. Preheat the grill to moderate heat. Mix in a large bowl sausage, sweet potato, onion, celery, dried apricots and 4 branches of thyme with 2 tbsp. l olive oil. Sprinkle 1/4 tbsp. orange juice add 0.5 tsp salt and a little black pepper.
  2. Tear off four sheets of foil 60 cm long. And fold each in half. Lay the sausage mixture on one side of each sheet foil. Fold the other edge on top and squeeze to seal. Grill the parcels by turning them from time to time to they did not burn out until the vegetables were soft, 18-22 minutes.
