Ingredients for the recipe:

  • 8 thick slices of bacon
  • 1/4 Art. tightly laid fresh basil leaves
  • 2 tbsp. l olive oil
  • 1 tsp freshly squeezed lemon or lime juice
  • Coarse salt and freshly ground pepper
  • 3 tbsp. l mayonnaise
  • 8 thick slices of multigrain bread
  • 2 peaches, cut in half and take out the seeds, thinly chop sliced
  • Young arugula to sprinkle
  • Gherkins or any small pickled cucumbers to serve (optional)

Recipe preparation:

  1. Fry the bacon in a pan at medium temperature, until crisp for about 8 minutes. Shift bacon on a dish lined with paper towels, then cut each slice in two.
  2. Mix basil, olive oil, lemon in a food processor juice, 1 tbsp. l water, 1/4 tsp salt, and pepper to taste. Grind all ingredients until smooth, then add mayonnaise and mix again.
  3. Toast bread in a toaster, then spread the slices with a mixture the basilica. Put half the slices of bread peaches, bacon and arugula, then cover with the remaining halves. Serve sandwiches with pickled cucumbers.
