Ingredients for the recipe:

  • 4 things. salmon fillet with skin (pieces about 2.5 cm thick .; 150 gr. each)
  • Salt and freshly ground black pepper
  • 2 tsp olive oil
  • 1 chopped onion
  • 1/2 tbsp. frozen peas
  • 3/4 Art. unsalted chicken stock
  • 1/3 Art. sliced pitted stuffed olives allspice
  • 1/4 Art. golden raisins
  • 2 tbsp. l salted pumpkin seeds
  • 1 tbsp. l hot sauce
  • 1/2 tbsp. couscous grits
  • Lime wedges for decoration

Recipe preparation:

  1. Season salmon with salt and pepper. In a large non-stick Heat a teaspoon in a frying pan over medium heat. olive oil. Place the salmon in the pan with the skin down and cook for about 8 minutes. until golden brown. Flip over salmon and remove the pan from the fire; let the fish reach for 5 minutes.
  2. Meanwhile, in a medium-sized stewpan over medium heat heat the remaining teaspoon of olive oil. Add the onion and fry for 5 minutes to transparency. Add the peas, chicken stock, olives, raisins, pumpkin seeds, hot sauce, 1/2 tsp salt and steam a pinch of pepper. Increase temperature, bring to a boil, and then stir in couscous. Remove the stewpan from the heat, cover and let the dish to reach for 5 minutes. Loosen the couscous with a fork. Serve salmon with couscous, garnishing with a wedge of lime.
