- 1 chopped onion
- 1/2 tbsp. frozen peas
- 3/4 Art. unsalted chicken stock
- 1/3 Art. sliced pitted stuffed olives allspice
- 1/4 Art. golden raisins
- 2 tbsp. l salted pumpkin seeds
- 1 tbsp. l hot sauce
- 1/2 tbsp. couscous grits
- Lime wedges for decoration

Recipe preparation:
- Season salmon with salt and pepper. In a large non-stick Heat a teaspoon in a frying pan over medium heat. olive oil. Place the salmon in the pan with the skin down and cook for about 8 minutes. until golden brown. Flip over salmon and remove the pan from the fire; let the fish reach for 5 minutes.
- Meanwhile, in a medium-sized stewpan over medium heat heat the remaining teaspoon of olive oil. Add the onion and fry for 5 minutes to transparency. Add the peas, chicken stock, olives, raisins, pumpkin seeds, hot sauce, 1/2 tsp salt and steam a pinch of pepper. Increase temperature, bring to a boil, and then stir in couscous. Remove the stewpan from the heat, cover and let the dish to reach for 5 minutes. Loosen the couscous with a fork. Serve salmon with couscous, garnishing with a wedge of lime.
