Salmon
- 4 skinless salmon fillet (110 g each), about 2.5 cm thick every
- 4 round slices (rings) of pineapple 1.3 cm thick, preferably fresh
- 2 tbsp. l olive oil
- 1.5 tsp chopped basil plus a few twigs for decoration
- 1.5 tsp chopped chives
- 1 tsp chopped tarragon plus a few twigs for decoration
- 1/2 tsp salt
- 1/2 tsp ground black pepper
Guacamole with anchovies
- 1/2 diced avocado
- 1/4 Art. lemon juice (from about 1 large lemon)
- 2 tbsp. l chopped basil
- 1 tbsp. l finely chopped chives
- 1 tbsp. l olive oil
- 1.5 tsp finely chopped tarragon
- 1/8 tsp anchovy pasta, optional
- 1/8 tsp salt
- 1/8 tsp ground black pepper
- 1 small clove of pressed garlic

Recipe preparation:
- Place the grill pan on a moderate heat or preheat a gas or charcoal grill.
- Mix the butter, chopped basil, chives, chopped tarragon, salt and pepper in a small bowl. Lubricate salmon fillet and slices pineapple with a mixture of herbs.
- Sauté the fillet for about 4 minutes. on each side, it should be almost ready, but still pink inside. Fry pineapple to light char, for 3-4 minutes. with each side.
- Transfer 1 slice of pineapple to a separate plate and lay out a piece of salmon so that it slightly overlaps the pineapple.

Guacamole with anchovies
Combine lemon juice, basil, onion, olive oil, tarragon, anchovy paste (if used), salt, pepper, garlic and avocado in a food processor. Add 2 tbsp. l water and treat until homogeneity. Cover the sauce and let stand for 15 minutes. up to 1 hour so that tastes and aromas are mixed into a single composition.
