- Wash the onion, cut into thin half rings.
- Ham (or other lean sausage, and if allows time, boil the meat) cut with a sharp knife into a neat cubes.
- Wash apples, peel, seed, cut into small cubes.
- In a volumetric bowl, combine apples, sauerkraut, ham, onion, canned peas (drain the liquid), season with olive oil to taste.
- When serving, transfer to a salad bowl.
