- Peel, wash, cut the leek into thin half rings (chop finely chopped onion)
- Wash eggplants, cut off the ends, cut with a sharp knife into neat cubes.
- Heat a frying pan with vegetable oil, lower into it chopped onions, stir fry.
- Add eggplant cubes to the onion, fry for another ten minutes, stirring.
- Wash the cherry tomatoes, cut into two parts (ordinary tomatoes cut into small slices).
- Cut mozzarella cheese into small pieces.
- For a salad dressing in a bowl, mix olive oil with mustard (paste), add salt, pepper, mix well.
- In a volumetric bowl combine all the prepared ingredients, pour with dressing, mix gently with two lettuce spoons.
- When serving, transfer to salad bowls.
