  1. Peel, wash, cut the leek into thin half rings (chop finely chopped onion)
  2. Wash eggplants, cut off the ends, cut with a sharp knife into neat cubes.
  3. Heat a frying pan with vegetable oil, lower into it chopped onions, stir fry.
  4. Add eggplant cubes to the onion, fry for another ten minutes, stirring.
  5. Wash the cherry tomatoes, cut into two parts (ordinary tomatoes cut into small slices).
  6. Cut mozzarella cheese into small pieces.
  7. For a salad dressing in a bowl, mix olive oil with mustard (paste), add salt, pepper, mix well.
  8. In a volumetric bowl combine all the prepared ingredients, pour with dressing, mix gently with two lettuce spoons.
  9. When serving, transfer to salad bowls.
