We don’t really like eggplant, but in this salad they don’t are felt. I advise everyone to try to cook at home this very simple, tasty and nourishing salad.

  1. Cut eggplant into plates and soak in cold water on 30 minutes to leave the bitterness.
  2. Remove the eggplant from the water, pat it dry with paper towels and cut into small cubes.
  3. Fry in vegetable oil with onions for about 15 minutes.
  4. Add salt, pepper and chopped garlic. Mix everything and cool.
  5. Finely chop eggs, chop nuts a little.
  6. Add to eggplant eggs, nuts, green peas and mayonnaise.
  7. Stir the salad and serve immediately.
