- Cut eggplant into plates and soak in cold water on 30 minutes to leave the bitterness.
- Remove the eggplant from the water, pat it dry with paper towels and cut into small cubes.
- Fry in vegetable oil with onions for about 15 minutes.
- Add salt, pepper and chopped garlic. Mix everything and cool.
- Finely chop eggs, chop nuts a little.
- Add to eggplant eggs, nuts, green peas and mayonnaise.
- Stir the salad and serve immediately.
