Salad of carrots, dates and feta

From ordinary carrots you can make an unusual tasty salad, which will be filled not only with vitamins, but also with contrasting tastes and textures. For a more aesthetic look, carrots cut into thin ribbons, they can be cut with a peeler or on t-mandolin, if you have one. All ingredients are mixed in a bowl with a tart sweet dressing of honey, olive oil and juice lime. Finely chopped dates complement the carrots perfectly. light caramel flavor, and soft salty feta will be interesting contrast with their sweetness. Ingredients for the recipe:

  • 3 medium carrots
  • 2 tbsp. l coarsely chopped cilantro
  • 1.5 tbsp. l olive oil
  • 2 tsp honey
  • 1 lime juice
  • 1/4 Art. crumbled feta
  • 2 tbsp. l chopped toasted almonds
  • 2 tbsp. l finely chopped dates

Recipe preparation:

  1. Slice whole carrots with a peeler or mandolin thin ribbons. Soak in ice water until the tapes harden. and do not curl, for about 15 minutes. Drain and dry carrot.
  2. Combine cilantro, olive oil, honey, 0.5 tsp in a bowl. salt and lime juice. Add carrots with feta cheese, almonds and dates and mix, evenly distributing the ingredients. Serve immediately or let the salad brew a little before serve.
