Ingredients for the recipe:

  • 4 pieces of chilled rump steak (170 g each)
  • Coarse salt and freshly ground pepper
  • 3 tbsp. l (45 gr.) Butter
  • 1 – 2 tsp Sahara
  • 1 clove of garlic, cut into slices
  • 2 heads of radicchio salad, tear leaves into small pieces
  • 1/3 Art. sun-dried tomato, cut into thin slices
  • 1/4 Art. balsamic vinegar
  • 1/2 tbsp. lightly salted chicken stock
  • 1/2 tbsp. fresh basil leaves, cut into strips
  • Sun-dried tomatoes and basil leaves, for sprinkling

Recipe preparation:

  1. Heat a large frying pan to a moderately high temperature. Grate meat with salt and pepper. When the pan is heated, add 1 Art. l (15 gr.) Butter and spread over the surface. Put steaks in a pan and sprinkle with a pinch of sugar, fry meat on one side until golden brown, about 4 min. Flip to the other side and continue cooking until golden colors, another 2 minutes. Transfer steaks to a cutting board and cover foil.
  2. Reduce temperature to medium, put in the same pan 1 Art. l (15 gr.) Butter. Add garlic and fry in within 20 sec. Add radicchio leaves, 1 – 2 tsp. sugar and 1/2 tsp salt. Add sun-dried tomatoes, vinegar and cook, until until the vinegar evaporates a little, about 1 min. Add the broth and simmer until the leaves of the radicchio are soft, about 2 minutes Stir in the basil. With tongs shift the leaves of radicchio into a dish. Continue to cook the sauce, until until it thickens a little, 1 – 2 min. Mix in the remaining 1 tbsp. l (15 gr.) Butter.
  3. Slice the rump steaks into thin slices and put on a dish. Pour over the sauce and sprinkle with plenty of sun-dried tomato and the basilica.
