Ingredients for the recipe:
- 2 pieces (180 g each) of baked tofu
- 1/8 tsp ground allspice
- 1/8 tsp mustard powder
- 2.5 tbsp. l (75 gr.) Butter
- 8 slices of rye bread without seeds
- 1/2 tbsp. salad dressing Thousand Islands
- 1 tbsp. sauerkraut, rinse and squeeze
- 4 slices of Swiss cheese
- 150 gr. mixed young herbs (approximately 6 tbsp.)
- 2 tbsp. l chopped gherkins or pickled cucumbers with dill, as well as 1 tbsp. l brine
- 2 tbsp. l pickled mushrooms (optional)
- 1.5 tbsp. l olive oil

Recipe preparation:
- Put tofu on a chopping board, then cut each piece horizontally in two. Sprinkle with allspice and mustard powder. Heat 1/2 tbsp. l (30 gr.) Butter in large non-stick pan with medium to high temperature. Place tofu in a pan and fry until golden colors, approximately 1 min. from each side.
- Spread each slice of rye bread 1 tbsp. l salad dressing, then put half the slices in layers of pickled cabbage, tofu and cheese. Cover the sandwiches with the remaining slices of bread.
- Heat 1 tbsp in the same pan. l (15 gr.) Butter to medium temperature. Put 2 sandwiches in a pan and fry until golden color, about 3 minutes. on each side while the cheese will not start to melt. Toast the remaining sandwiches on a creamy oil.
- Mix greens, gherkins, pickle, mushrooms and olive in a bowl butter. Serve salad sandwiches. You can still make tofu Cuban sandwiches.
