Rigatoni pasta with baked cherry tomatoes and burrata cheese

This dish combines the flavors of a true Italian pasta: pasta, tomatoes, basil, garlic and young cheese. Nothing extra, It is prepared simply and quickly, but it looks very elegant. Sauce for pasta is oven-baked cherry tomatoes in a small amount of olive oil. After baking them and without that sweet taste becomes even richer. Crushed tomatoes mixed with fried garlic, boiled rigatoni paste and sprinkled with basil. The highlight of this dish is a piece of burrata cheese, which is laid out on top of each serving and spreads throughout pasta mixed with baked tomato sauce.   • 3 cloves of garlic, finely chopped
  • 2 tbsp. l chopped fresh oregano
  • 1 ball 220 gr. burrata cheese, cut into 4 parts
  • 0.5 tbsp. torn fresh basil

Recipe preparation:

  1. Preheat the oven to 200 ° C. Combine the tomatoes in a large bowl with 2 tbsp. l olive oil, 0.5 tsp salt and a little black pepper. Put the tomatoes on a baking sheet with sides and bake until soft, about 20 minutes. Return them to the bowl and mix with a wooden spoon to smash the tomatoes and you have turned out a sauce with slices.
  2. Meanwhile, in a large saucepan, bring salted water to boiling. Add pasta and cook as recommended. on the package. Cast separately 0.5 tbsp. pasta water, drain the rest.
  3. While the pasta is boiling, in a small frying pan over medium heat heat the remaining 2 tbsp. l olive oil. Add the garlic and fry, stirring, until light golden brown, about 3 minutes; put it in a bowl with tomatoes.
  4. Transfer the pasta to the tomato mixture and mix by adding enough stored water to make the sauce more liquid. Add oregano, salt and pepper to taste.
  5. Put a slice of cheese on each serving, sprinkle with basil and black pepper, drizzle with olive oil. Note Burrata is fresh mozzarella, which has a delicate creamy texture inside, so it spreads when sliced. If you cannot find this cheese, replace it with ricotta.
