Red Beans with Sausage and Rice

The second dish recipe – red beans with sausage and rice. Smoked minced turkey sausage fried with garlic. Difficulty: easy Servings: 6 In the recipes volumetric containers are used in volume: 1 cup (tbsp.) – 240 ml. 3/4 cups (st.) – 180 ml. 1/2 cup (tbsp.) – 120 ml. 1/3 cup (Art.) – 80 ml. 1/4 cup (st.) – 60 ml. 1 tablespoon (tbsp) – 15 ml. 1 teaspoon (tsp) – 5 ml.

Ingredients for the recipe:

  • 1 tbsp. l olive oil
  • 220 gr smoked turkey sausages, cut into large in pieces
  • 1 medium onion, chop finely
  • 1 medium green bell pepper, chop finely
  • 1 clove of garlic, chop finely
  • 1/2 tbsp. lightly salted chicken stock
  • 2 cans (450 g each) canned red beans kidney, drain and rinse under water
  • 1/2 tsp ground cumin
  • 1/2 tsp dried thyme
  • 1 bay leaf
  • Freshly ground black pepper, to taste
  • 3 tbsp. cooked rice
  • Chopped green onion for serving

Recipe preparation:

  1. In a medium-sized pan, heat the oil to a medium-high temperature. Add sausage, onion and sweet pepper; fry often stirring until vegetables begin to soften, 3 – 5 min. Add garlic and cook for 30 sec. Add beans, chicken stock, cumin, Thyme, bay leaf and pepper to taste, bring to a boil. Cover lid, reduce heat to a moderately low temperature and continue cooking for another 10 minutes.
  2. Arrange the rice in plates, put the beans and sausage on top and sprinkle with green onions.
