Ingredients for the recipe:
- 2 small striped beets
- 1 medium carrot
- 1 medium watermelon radish, cut in half (note see below)
- Half a head of red cabbage
- 1/4 Art. olive oil
- 1 tsp honey
- Juice 1 Lemon
- 1 small bunch of watercress, wash, large stems cut off
- 2 tbsp. l fried salted pumpkin seeds
- 60 gr goat cheese crumbled
- 1/3 Art. basil leaves torn
- 1 tbsp. l coarsely chopped chives
- Special equipment: mandolin vegetable slicer

Recipe preparation:
- Rub the beets on a mandolin into thin circles, carrots on thin slices obliquely, radish – into thin semicircles. Sharp knife chop the cabbage thinly.
- In a small bowl, whisk butter, honey, lemon juice, 0.5 tsp salt and 1/4 tsp black pepper.
- Spread the beets on a large serving platter, carrots and radishes. Sprinkle 2 tbsp. l vinaigrette dressing. In a bowl medium size gently mix cabbage, watercress and remaining refueling. Put a slide on the vegetables on the dish and sprinkle on top of pumpkin seeds, goat cheese, basil and chives.
Note
Watermelon radish looks on the slice the same way as its fruit namesake – bright pink inside and green in outline. It can be found in the summer in farmers markets or in vegetable departments of supermarkets.
