This recipe for delicious ravioli has a very elastic dough. We will cook it at home on five yolks. Let’s make the vegetable filling – from zucchini with arugula. For tenderness, add mascarpone.

  1. Take 5 eggs. Separate the squirrels from the yolks. Beat the yolks. (Squirrels we do not need).
  2. Sift flour into a bowl. Add salt. Pour in the yolks. Carefully knead elastic dough. If necessary, you can add a little warm (not hot) water. Cover the dough with cling film and place in the refrigerator for 30 minutes.
  3. Wash zucchini, peel, grate. To salt. Put on a sieve to stack juice. Wring out.
  4. Finely chop the arugula.
  5. Grate hard cheese.
  6. Put zucchini, arugula, grated cheese and mascarpone in a bowl. Mix the filling well.
  7. Beat one egg.
  8. Roll out two thin layers from the dough. One layer to smear the egg. Spread filling balls on it with a teaspoon. Cover the second layer of dough. Press the dough between the filling. Slice ravioli.
  9. Boil ravioli in a large amount of salted water until readiness.
