Ravioli with Potatoes and Sheep Cheese

Ravioli can be prepared at home with a variety of fillings. I offer a recipe with mashed potatoes. Two will give an interesting taste cheese – soft ricotta cheese and hard pecorino sheep cheese. For Aroma put in the stuffing greens. So delicious ravioli great go well with tomato sauce.

  1. Sift flour into a large bowl. Make a groove in the flour. Drive in 3 eggs. Add salt. Pour in olive oil. Knead smooth and elastic dough. Cover the bowl with the dough with a lid or foil. To give stand for 30-40 minutes.
  2. Wash and peel potatoes. Boil in salted water, make mashed potatoes.
  3. Finely chop the greens. Squeeze the garlic through a press.
  4. Grate hard cheese. Mash soft cheese with a fork.
  5. In the mashed potatoes add parsley and green onions, garlic, soft cheese, half grated hard cheese. Salt and pepper. Beat one egg. Mix well.
  6. Divide the dough into two halves and roll it thinly. For the first layer lay the filling balls at a distance of 5 cm from each other. Top with a second layer. Press on the dough between the filling, so that the layers stick together. Ordinary or curly knife chop square ravioli.
  7. Boil water in a large pot. To salt. Drop in boiling ravioli. Cook for 5 minutes. Take out the finished ravioli slotted spoon.
  8. Pour the tomatoes with boiling water and peel. Finely chop and sauté in olive oil. Add chopped basil. Add salt and pepper to taste. Mix well.
  9. Arrange ravioli on plates, pour sauce and sprinkle with grated cheese.
