Delicious pickle with beef kidneys. To cook it at home it’s better to prepare in advance: soak the pearl barley at night, the kidneys, too, in a large number.

- Soak the kidneys in cold water for at least 3-4 hours, changing the water once an hour.
- Cut fat and films from the kidneys, cut them in half and remove fat in the center.
- Pour new and bring to a boil, boil until a foam is released. Drain the water, rinse the kidneys, add water to boil again 1 hour.
- Remove the kidneys from the water, rinse and cut into strips.
- Rinse pearl barley, if soaked, rinse with water and to dry. If not, boil until half cooked for 1.5 hours and rinse water and let the water drain.
- Chopped peeled onions with carrots. Frying them on vegetable oil until soft, add tomato paste and fry for about 3 minutes.
- Boil the broth and put in it peeled and chopped potato wedges and pearl barley.
- Also put peas and bay leaves. Cook about 15-20 minutes.
- Add chopped kidneys.
- Cut cucumbers and add in 200 ml. water.
- Add the cucumbers along with the broth to the soup. Bring to boiling.
- Put the fried vegetables with tomato paste in the soup. Cook 10 minutes. Add salt if necessary.
- Cut the meat into slices and put in the soup. Bring to boiling.
- Sprinkle the soup with chopped herbs and serve with sour cream or lemon.
