- Wash the zucchini and cut into thin slices, we use it ordinary peeler.
- Red onion, sweet red pepper, cucumber and cherry tomatoes cut into small pieces.
- Wash and dry the spinach, cut into thin strips.
- For dressing, we mix the juice of half a lemon, garlic (minced or passed through a press), olive oil, salt and pepper.
- Boil quinoa and cool.
- Add quinoa to the chopped vegetables, mix everything carefully and refuel with the resulting dressing.
- Gently spread the salad on the dish, decorate on top seedlings (I took seedlings of red onions), and decorate more basil.
