The peculiarity of the risotto is that it is cooked in a broth, in this case – on vegetable broth. Therefore, in 1 liter of water you need to dilute bouillon cube.

Fry shallots, chopped into small cubes, in olive oil and add rice to the pan, fry everything for several minutes, then pour 600 ml of vegetable broth.

Cook rice until the liquid has evaporated, after which add chopped pumpkin and pour all the remaining broth.

After a few minutes add cream, rosemary, if any need, then add salt and pepper to the dish. When serving rice sprinkle generously with grated parmesan.
