Vitamin salad dressing recipe
As they say, there are no mates on the taste and color, however this salad out of competition for the winter, as some of the most used here tasty and popular vegetables containing a lot of healthy vitamins. Yes, it will take about 2 hours to prepare this salad, or maybe a little more, especially at first, but then all winter will enjoy the great summer taste that will become decoration of a casual or festive table.
The main ingredients:
- eggplant, apples, pumpkin, tomato – 1 kg each;
- red bell pepper – 1 pc.;
- parsley, dill and garlic – 200 g each;
- vegetable oil – 400 ml;
- apple cider vinegar – 100 ml;
- sugar – 200 g;
- salt – 70 g;
- ground black pepper to taste.
Cooking method
My eggplant and, without removing the skin, cut into oblong pieces, about 2 * 3 cm in size. We clear a pumpkin of a skin and seeds and cut into pieces of the same size. Next, take apples, wash and cut into 6 slices. We clear the segments of seeds, but leaves the skin. After that we cut each slice into 2 parts across.
All of my available greens, slightly dried and finely chopped. Peel the garlic, and cut the washed tomatoes into 6-8 parts. After we pierce garlic with tomatoes at medium speed in blender, but in its absence you can skip all this through a small meat grinder.
We prepare a large wide saucepan with a flat bottom and pour tomato mixture there. Pour in vegetable oil here, vinegar, add salt and sugar and bring to a good fire to boiling.
All the vegetables that we prepared are dipped in a boiling mixture, reduce heat and simmer for 50 to 60 minutes, often stirring so that nothing burns. After time we pack hot mixture in prepared jars. We turn them on a turn-key basis and wrap them in something very warm. We wait cool completely and enjoy a great taste afterwards.
Tasty recommendations: for cooking this winter salad is recommended to take only sweet and hard varieties apples. Skinning is not necessary at all, but if someone it seems a more acceptable option without it, then the experiments are still no one has canceled. If desired, the salad can be made more spicy, adding a little chili pepper.
