This potato salad can feed a large crowd of people, while meat is cooked on coals, and it does not at all look like traditional salads made from boiled potatoes with mayonnaise and eggs. All the pieces in it go one to one, and so that they look neatly, the potatoes after cooking are immediately transferred to ice a bath. Then slices of red potato are mixed with grains corn, grape tomatoes, red onions and whole leaves green basil. Only olive is used for salad dressing oil and lemon juice. Ingredients for the recipe:
- 450 gr small red potatoes, well washed
- 5 medium ears of corn (approximately 1.3 kg.)
- 2 tbsp. grape tomatoes cut lengthwise in half
- 1 small red onion, peeled and finely chopped (approximately 0.5 – 3/4 st.)
- 1 large bunch of fresh basil, washed and dried; tear leaves
- 1/4 Art. extra virgin olive oil
- Juice 2 large lemons
- 1 tsp coarse salt
- About 15 grinding black pepper

Recipe preparation:
- Put the potatoes in a large pot of salted water and bring to a boil. Boil until soft. piercing with a fork, about 15 minutes. Catch potatoes with a slotted spoon pots and put them in a bowl of ice water to tubers stopped cooking.
- Peel the leaves and hair from the corn and break each ear in half. Boil in the same boiling water for 5-7 minutes until readiness, but it should not be very soft. Shift cooled potatoes on a kitchen towel and pat. Shift corn in the same ice bath until it cools down. Cut each potato tuber into 4 parts and put in a large a bowl.
- Remove the corn from the water and dry it. With a large knife, cut off ears of corn. Add them to a bowl of potatoes. Put there grape tomatoes, onions and whole basil leaves. Add olive oil and lemon juice and mix gently. Salt and pepper to taste. Serve immediately.
