Discover a new range of flavors – whipped fried eggs. She’s amazingly light, creamy, literally spreading over the mouth when you eat it. You can cook at home simply scrambled eggs, but we will do it in Portuguese – with tomato fondue. Eggs are taken at the rate of 3 pieces per person.

  1. First, prepare the filling of tomato fondue. Cut my tomatoes in half, take out the liquid inside and cut it into small pieces cubes.
  2. We clean onions. Finely chop it. Garlic cloves only clean from the husk, but leave intact.
  3. Stew the onion in oil, then add the cubes of tomato pulp and cloves of garlic. Salt, pepper, pour a little sugar and add a little tomato paste. Add spices (thyme, rosemary and Bay leaf). Extinguish without a lid until evaporation of excess moisture, then remove the garlic cloves and bay leaf.
  4. Now do the beaten eggs. She takes 18 minutes to cook. Break the eggs into a bowl, salt, beat with a fork.
  5. Melt about 80 g of butter in a saucepan. Pour in butter the eggs and cook over very low heat, stirring constantly, so that the eggs do not burn on the bottom and on the walls of the pan.
  6. Remove from the stove, add the remaining butter and mix. Beat the fried eggs ready.
  7. To make the fried eggs in Portuguese, mix our beaten eggs with 2/3 of cooked fondue from tomatoes. The remainder put the tomato filling on top of the scrambled eggs.
