Ingredients for the recipe:

  • 170 gr salted cod
  • 32 sheets for wontons
  • 2 l milk (portioned)
  • 2 tbsp. l olive oil
  • 1/2 tbsp. chopped onions
  • 2 tbsp. l chopped green onions
  • 2 tbsp. l chopped shallots
  • 1/4 Art. chopped celery
  • 1/4 Art. chopped green bell pepper
  • 2 tbsp. l chopped garlic
  • 1 tbsp. boiled potatoes
  • 1/2 tbsp. peeled and peeled and chopped Italian plum tomatoes
  • 1 tsp crushed red pepper flakes
  • 1/2 tsp black pepper
  • 1/4 Art. chopped fresh parsley
  • 1 lightly beaten egg
  • 2 tbsp. l chopped green onions
  • 2 tbsp. l diced red pepper
  • 2 tbsp. l diced yellow pepper
  • 1/2 tbsp. grated parmesan

Portuguese sauce:

  • 1 tbsp. l olive oil
  • 1 tbsp. chopped onions
  • 1/2 tbsp. chopped celery
  • 1/2 tbsp. chopped bell pepper
  • 2 tbsp. l chopped garlic
  • 2 tbsp. peeled and chopped Italian plum tomato
  • 1/4 Art. pitted black olives
  • 1/4 Art. chopped fresh basil
  • 2 tbsp. l chopped fresh oregano
  • 2 tsp chopped fresh thyme
  • 1 tsp salt
  • 1/2 tsp crushed red pepper flakes
  • 1 tsp black pepper
  • 1 tbsp. white wine
  • 2 tbsp. chicken broth
  • 1/2 tbsp. chopped green onions
  • 8 tbsp. l butter at room temperature

Creole Spice Mix:

  • 2.5 tbsp. l paprika
  • 2 tbsp. l salt
  • 2 tbsp. l garlic powder
  • 1 tbsp. l black pepper
  • 1 tbsp. l onion powder
  • 1 tbsp. l cayenne pepper
  • 1 tbsp. l dried oregano leaves
  • 1 tbsp. l dried thyme
  • Mix all ingredients thoroughly and store in sealed jar or container

Recipe preparation:

  1. Two days before cooking, put the salted cod in a bowl and pour 1 liter. milk. Refrigerate for 24 hours, pour milk and rinse the cod thoroughly with cold water. Soak cod in the remaining 1 liter. milk for another 24 hours (in the refrigerator). Again rinse with water and dry thoroughly. Cut the fish very thin.
  2. Heat olive oil in a pan. Put onions, green onions, shallots, celery, bell pepper and garlic. Fry for 2 minutes. Add crushed potatoes, tomatoes, red pepper, black pepper, parsley and fry, stirring, 3 min. Add salted cod and sauté for 5 minutes, stirring. Remove the pan from the heat. Separate the sheets for the wontons so that they were as thin as possible and grease them with a beaten egg.
  3. Put 2 tbsp. l fillings on each of 16 sheets and cover other 16 sheets. Press the edges with a fork. In a pot of boiling add ravioli with salted water and cook for about 5 minutes. Get out with a slotted spoon. Salt and pepper. Lay out a small the amount of sauce in the center of a shallow bowl. Put 2 on the sauce ravioli. Sprinkle with green onions, diced pepper and grated Parmesan. Portuguese Tomato Sauce: In a Frying Pan heat the olive oil. When the oil begins to smoke, fry onions, celery, bell pepper and garlic for a minute. Add tomatoes, olives, basil, oregano, thyme, salt, crushed red pepper and black pepper. Cook a minute. Pour in wine and broth and bring the mixture to a boil. Add spring onions and cook over high heat for 12 minutes. Add butter. At add spice mixture if necessary.
