Ingredients for the recipe:

  • 1 large pork tenderloin peeled from veins (about 700 gr.)
  • 3 tbsp. l olive oil
  • 1 thinly chopped small onion
  • 2 Bulgarian red and / or yellow sliced in strips peppers
  • 6 crushed cloves of garlic
  • 16 sage leaves
  • 2 tbsp. l tomato paste
  • 1/4 Art. sliced in rings of pickled pepperoni, and 2 hours l liquid from a can
  • 1/3 Art. dry white wine
  • 2/3 Art. unsalted chicken stock
  • 1/4 Art. grated Parmesan cheese

Recipe preparation:

  1. Turn on the electric grill. Slice the pork obliquely on pieces 2.5 cm thick .; salt it. Heat large heat resistant skillet over medium heat and pour 1 tbsp. l olive oil. Add onion, bell pepper and 1/2 tsp. salt and fry for 4-6 minutes until lightly fried crust. Put vegetables on a plate.
  2. Pour in the remaining 2 tbsp. l butter in the pan. Add pork and fry it over high heat for 2-4 minutes. from each side, until golden brown. Put the pork on a plate with onions and peppers.
  3. Reduce the heat to medium and put the garlic in the pan, sage and tomato paste. Cook, stirring, for 1 min., until the tomato paste turns brick red. Add circles of pepperoni and their liquid, then pour the wine and bring to a boil.
  4. Pour in the chicken stock and bring to a boil again. Return pork in a pan and spread in one layer; add onion and pepper and sprinkle with cheese. Put in the oven and cook under the grill. for 4-7 minutes, until the pork is ready.
