  1. We wash the pork tenderloin, dry it with paper towels and cut across the fibers into 8 pieces. If thin remain small pieces, combine them together. Smoked bacon strips cut in half, it turns 8 slices.

  2. Wrap the prepared meat in strips of bacon completely, if not enough length, then a slice of bacon is a little stretch. Spread medallions in bacon in a greased cast iron skillet or pan. If the slices of bacon stick poorly, we bind with culinary twine.

  3. Sprinkle the medallions with ground pepper, a little salt (smoked bacon salted) and send to the oven at 200 degrees on 10 minutes. After 10 minutes, take out the aromatic meat, sprinkle each a piece of grated cheese, add to the bottom cut in half cloves of garlic and send for another 15 minutes.

  4. We take out the tender tender medallions in bacon and cheese and serve hot with mashed vegetables and your favorite salad.
