What is schnitzel? This is a piece of milled meat, often thinly beaten to perfect softness, breaded in breadcrumbs and fried in large quantities of oil (fat) to absolutely mind-blowing, golden, crisp. This is not a chop – it is fried haphazardly and often harshly. This is not a cutlet – a true schnitzel should be made from a whole piece of meat, although there are recipes for chopped schnitzels.
