Ingredients for the recipe:

  • 2 slices of pork tenderloin (approximately 700 gr.), Sliced into pieces of 4-5 cm.
  • 1 jalapeno or green chilli, coarsely chopped (so as not to it was very sharp, remove the seeds)
  • 5 cm slice of ginger, peeled and large sliced
  • 1 tbsp. l light brown sugar
  • 2 tbsp. l cumin seeds
  • 4 green onion feathers (3 chopped large, 1 chopped rings)
  • 1 garlic clove, coarsely chopped
  • 3 tbsp. l vegetable oil, and a little more for lubrication
  • 1/4 Art. and 2 tbsp. l soy sauce
  • 1 tsp Chinese seasoning “Five spices”
  • Coarse salt and freshly ground pepper
  • 1/4 Art. rice vinegar (without spices)
  • 1 tsp dark sesame oil

Recipe preparation:

  1. Soak 12 long wooden skewers in water for at least 30 minutes. Meanwhile, in a small frying pan over medium heat toast cumin seeds for 4 minutes until golden brown. Shake the pan constantly. Put the seeds in a plate.
  2. In a food processor, mix 3 feathers of chopped green onions, jalapeno pepper, ginger, garlic, 1 tbsp. l vegetable oil brown sugar, 2 tsp soy sauce, seasoning five spices, 3/4 tsp salt and 1/2 tsp pepper. Grind the mixture to a pasty consistency. Add the fried cumin seeds. Do 1-2 more pulsating movements to slightly grind the seeds.
  3. Lightly salt and pepper the pork, grate 3/4 pasta with cumin Cover with cling film and refrigerate for 30-60 minutes.
  4. Meanwhile, prepare the sauce: in a small bowl, mix for 1 hour. l the remaining pasta with cumin, the remaining 1/4 tbsp. soy sauce vinegar, sesame oil and 1 tbsp. l water. Add chopped with green onion rings, mix and set aside.
  5. Grill to medium temperature. In a small bowl mix the remaining pasta with cumin and 2 tbsp. l vegetable oil set aside to grease pork. Grill generously grease vegetable oil. For each skewer, chop 3-4 pieces of pork and grease it with vegetable oil. Grill kebabs 6-9 minutes, periodically turning over until characteristic marks. In the last minute of cooking, grease the meat with a mixture cumin and olive oil. Let the kebab stand before serving 5 minutes. Drizzle with sauce.
