  • 2 tbsp. l extra virgin olive oil
  • 1 onion, chopped finely chopped
  • Coarse salt and freshly ground pepper
  • 1 lime juice
  • 2 tbsp. l honey
  • 2 tsp ground cumin
  • 2 tsp paprika
  • Pomegranate seeds, for decoration (optional)
  • 1 tbsp. farro (a special type of wheat grain, can be replaced by plain wheat or flour)
  • 2 oranges, cut in half (squeeze juice from 1.5 oranges, 1/2 cut into 4 slices)
  • 170 gr Brussels sprouts, peeled and finely chopped

Recipe preparation:

  1. Preheat the oven to 190 degrees. In a large stewpan heat over medium heat 1 tbsp. l olive oil. Add red onions, cook, stirring, 5 minutes until golden colors. Add the grains of farro, 2.5 tons of water, 1/2 tsp. salt and black pepper to taste and bring to a boil. Turn down the heat to medium and simmer for 25 minutes until boil farro soft. Add brussels sprouts and cook for 5 minutes to she became soft. Salt and pepper.
  2. Mix honey with lime and orange juice. Season the pork cumin, paprika, 1/2 tsp salt and 1/4 tsp black pepper. The remaining 1 tbsp. l warm olive oil in large non-stick heat-frying pan over moderate heat. Place the pork and orange slices in a pan. Cook 5 minutes until golden brown, periodically turning the pork. Turn orange slices over and add a mixture of juices.
  3. Place the pan in the oven. Bake pork for 15 minutes, until the temperature of the meat inside will not reach 62 degrees. Leave on 5 minutes, then cut the pork and pour the juice formed in in the pan. Serve with oranges and farro grains on top sprinkle with pomegranate seeds.
