Pork and Black Bean Tacos

Difficulty: easy Servings: 4 In the recipes volumetric containers are used in volume: 1 cup (tbsp.) – 240 ml. 3/4 cups (st.) – 180 ml. 1/2 cup (tbsp.) – 120 ml. 1/3 cup (Art.) – 80 ml. 1/4 cup (st.) – 60 ml. 1 tablespoon (tbsp) – 15 ml. 1 teaspoon (tsp) – 5 ml.

Ingredients for the recipe:

  • 12 warmed corn tortillas (corn tortilla recipe, wheat tortilla recipe)
  • 450 gr minced pork
  • 425 gr. black bean
  • 1 zucchini, cut first into 4 parts, and then sliced into 1.2 cm
  • 1 bell pepper (any color), sliced in pieces of 1.2 cm.
  • 1/2 tbsp. grated mozzarella cheese (approximately 60 gr.)
  • 2 minced garlic cloves
  • 2.5 tbsp. l vegetable oil
  • 1 small red onion, finely chopped
  • 1 tsp ground cumin
  • 1/2 tsp cayenne pepper
  • Coarse salt
  • Freshly ground black pepper

Recipe preparation:

  1. In a small saucepan over medium heat, heat 1/2 tbsp. l vegetable oil. Add half the garlic and cook for 1 minute until golden brown, occasionally stirring. Add the beans and bring to a boil. Remove from heat, sprinkle with grated cheese and cover lid to keep warm.
  2. In a frying pan over medium heat, heat 1 tbsp. l vegetable oil. Add the minced meat, the remaining garlic, half red onion, cumin, cayenne pepper and 1/2 tsp. salt. Cook stirring for 5 minutes until the meat is roasted. Put in a bowl with using a slotted spoon. The remaining 1 tbsp. l heat up vegetable oil in the pan. Add bell pepper, zucchini and 1/4 tsp. salt and cook for about 3 minutes until half cooked. Put the pork stuffing back into the pan, add a little water, salt and pepper over to taste.
  3. Tortillas fill with minced meat and vegetable mixture. Serve with beans. Sprinkle the remaining chopped onion on top.
